Can we keep posting jobs from our ATS?

Yes. Your team keeps working in the ATS and the site pulls from it, but the pages render server-side as real URLs with JobPosting structured data, so Google for Jobs can index them. That is the part an ATS-hosted iframe cannot do for you.
